In 2021, a local brewery approached Centercut Consulting about adding a daily service food truck to their operation. Centercut designed a concept built around meals cooked in an open flame rotisserie. Dinner service included cutting board meals with a variety of proteins, and lunch service used those high quality meats in a sandwich and specials menu. An accompanying catering menu was also designed to maximize the brewery’s event rental space. Centercut provided operational support for two years to train, maintain food costs and food standard. In addition, Centercut ran the social media marketing channels, designed the website, and operated the online order system.
